Pearl Onions, Peas & Carrots
Its official, eating season is here. The carrots are fattening and the pearl onions and peas are ripening in harmony. This trio is a spring tradition of good crunch and pleasant sweetness.
1. Steam whole baby carrots with the peas for no more than 5 minutes - they should be toothy with a bit of resistance.
2. Meanwhile sauté halved pearl onions (or scallions or any young spring onions) in a bit of olive oil and butter until lightly browned on the periphery.
3. Add the steamed carrots and peas to the pearl onions and toss and sprinkle with chunky salt. Serve hot.
Warning: this dish may cause excessive groans of delight which could be embarrassing in certain situations.
