We have been saving the seed for Rosso di Milano onions for the past few years. Onions are biennial which means they flower and set seed in their second year of growth. It is a two year process to grow onion seed, the method is called “seed-to-bulb-to-seed”
Year one: plant seeds in March in greenhouse, transplant into fields in late April, harvest in September. From the harvest you select the finest onions to over-winter and to replant the following Spring.
Year two: As soon as the soil is workable in spring - late March or early April - we plant the selected onions from the previous Fall’s harvest. From the onion a green shoot will emerge creating a beautiful spherical flower filled with hundreds of seeds. The seeds are generally dry and ready to harvest in late August.
Year three: plant the collected seeds in the greenhouse in Early March and start the process anew.
